French Toast Sticks (Dairy and Egg Free)

french toast sticks dairy free egg freeWow it has been a stressful week! There are a lot of changes going on right now that are just going to take some getting used to. I’m hoping that this weekend we can go on a nice hike to clear our minds. My mom even sent me new hiking shoes so I am SUPER excited to use those!

Last weekend we didn’t get the chance to go hiking because Eric was working really hard on his talk, so instead of waking up early to go hiking, I woke up early to make french toast sticks! They were so good. They taste like Burger King french toast sticks. Continue reading

Vegan Yeast Doughnuts

four doughnuts headerOn Friday I found out that my little brother (the one still in high school) was bullied by his ‘friends.’ Ugh this really irks me. High school can be hard sometimes, I wish I could take away some of the bad emotions he is experiencing right now. I wish I could tell him that when he graduates he won’t have to deal with it anymore. Sadly that isn’t true. When I was in high school I thought once I graduated I wouldn’t have to deal with bullies or see others be bullied again. But in reality, bullying occurs in all walks of life.

On a happier note, Eric and I had an awesome night last night! We decided to go get Ramen at a little restaurant we frequent. I love going there, the owners are so friendly and know our order by memory and their sushi is really good too. After we ate we went to see a movie at the theater. It reminded me of being home and it was nice to get out and do something different for a change. Continue reading

Cranberry Orange Scones

Cranberry Orange SconesWhat a whirlwind weekend it has been so far! Eric has a big literature talk coming up so he has been spending a lot of time working on his talk. Yesterday I spent almost the entire day in the was awesome! My plan was to make 4 different soups (4 servings each) that I could then save and have in the freezer for future use. I ended up only making 2 soups, but I also added in marble cupcakes, these yummy scones, and a pot pie for lunch. When I was done in the kitchen it felt like I didn’t have a lot to show for my hard work, but then I thought…hey…I just made 4 dinners, 1 lunch, and 1 dessert. All the hard work pays off in the end.

This morning we woke up and headed to Santa Monica to watch one of our friends, Emma, run in the LA marathon. We grabbed a couple scones and ate them at mile 23 while waiting. It was super hot today and someone even passed out while we were cheering everyone on! It was so exciting watching everyone run and giving high fives as people ran by.

Anyway, about 6 months ago we were at our local Ralph’s and found a package of cranberry scone mix that we decided to try. We loved them and ended up buying them multiple times, the only downfall is that they are sooo expensive! One little pack of scones is $7.99 and that feeds us for maybe two breakfasts! I know..we couldn’t eat out that cheap…but….grad school budget. So I figured why not make my own scones. This was my first go at making scones and I must say they were delicious! You can even see the orange flakes in the dough!
