Butternut Squash Stuffed Shells – Vegan

Vegan and Gluten Free Corn Cakes

corn cakesToday for vegan day I made balsamic tofu sandwiches with basil, tomato, onion and lettuce for lunch (um yum) and gluten free corn cakes for dinner! The tofu sandwiches were so easy. I was kind of going for an Italian mozzarella, basil and tomato sandwich so I marinated tofu slices in a sweet balsamic vinegar marinade. I grilled the slices up nice and crispy and plopped them on toasted bread with the other veggies. Lunch…complete. Continue reading

Mushroom and Leek Hash with 10 Spice Tofu

10 Spice TofuI love hash. There was a period of a couple months when Eric and I ate hash every Saturday morning! I’ve never had hash for dinner, though, and thought this weeks vegan night would be a great opportunity. Hash can be SO easy if you have left over potatoes from dinner the previous night (which we did). Just sauté some veggies with the potatoes and boom! Hash!

I had some left over 10-spice seasoning that I used to make this veggie soup from Oh She Glows and decided to use it to season my tofu. P.S. if you haven’t tried any of Angela’s recipe you’re missing out! This soup was awesome and we even froze half of it for a future meal. Eggplant Parmesan for Vegan Night!

eggplant parmesan over pastaFor vegan night this week I made eggplant parmesan over pasta and it was DELICIOUS. I cut the eggplant into 1/2 inch slices and sweated them in the oven. I then made a batter out of 1 cup of almond milk, 1/4 cup flour, 1 tbsp nutritional yeast and a pinch of salt. I dipped the eggplant slices in this batter followed by vegan italian bread crumbs I got from Ralph’s (they are awesome bread crumbs). These baked up in about 25 minutes and we served them over pasta with marinara sauce on top! We will definitely try these again soon. I’ve always wanted to try to make eggplant roll ups so maybe that will be next. Continue reading

Cauliflower Cakes

cake with green goddessHappy St. Patrick’s Day! Ha just kidding, I know I’m two days late. On St. Patty’s day we got home later than anticipated so I didn’t even have dinner on the table until 10:30 pm! Ugh. I was really grumpy from lack of food so I decided to wait until today to finish this post. I don’t know if people are familiar with Spongebob Squarepants anymore…but when one of us is really grumpy I say we are being a krabby patty, which I guess is fitting for last night since I made cauliflower patties. Oh, AND it was St. Patty’s Day ha! So yeah I was DEFINITELY being a krabby Patty that night. Maybe one day I will figure out a way to make crabby patties for dinner… Continue reading
