So next week we decided that each day we are going to have an assigned country and eat foods from that country for the day. I’m really excited about this but more on that after the hash.
Last Saturday Eric and I were trying to decide what to eat for breakfast and decided to just walk up to the store, grab ingredients, and go with the flow. The whole “go with the flow” thing is a little difficult for me because I am a planner. Period. I love knowing what is coming next and the unknown scares me (for somewhat obvious reasons considering my past). Anyway…I grabbed a bunch of ingredients and headed home to make a (sort of) asian inspired hash. Continue reading
For vegan night this week I made eggplant parmesan over pasta and it was DELICIOUS. I cut the eggplant into 1/2 inch slices and sweated them in the oven. I then made a batter out of 1 cup of almond milk, 1/4 cup flour, 1 tbsp nutritional yeast and a pinch of salt. I dipped the eggplant slices in this batter followed by vegan italian bread crumbs I got from Ralph’s (they are awesome bread crumbs). These baked up in about 25 minutes and we served them over pasta with marinara sauce on top! We will definitely try these again soon. Last December while Eric and I were home for Christmas, we decided that in the new year (2015) we would have at least one vegan day every week for the whole year. So far we have been going strong and Tuesday seems to be our vegan day, although I think we might be shifting it to Monday or Thursday soon. Continue reading
Today was an awesome day and a beautiful Saturday. We woke up at a leisurely time, ate cranberry orange scones in bed, played with the dogs, then went on a new hike. Every hike we go on is a completely different experience and todays hike was GORGEOUS. I will admit that it was not the most strenuous nor the longest hike we have gone on and therefore not the hardest workout, but it was worth going for the views alone. And by views I mean flowers. The main trail follows a fire road, but not too far in we cut off the main road to a little side trail. As soon as got on the path there was a patch of yellow wild flowers. I stopped to take pictures and we went on our way. A few minutes later we turned a corner and bam! There was a field of wild flowers for a far as we could see. The flowers that lined the path were taller than me. (I know it’s not too hard for something to be taller than I am….but still!) Continue reading
I remember when I lived at home there was a period of time when my little brother LOVED to eat ice cream sandwiches. There was always a stock of them in our freezer. Now I have all of this peanut butter ice cream laying around so I figured why not make ice cream sandwiches! Eating these has made me a little homesick. Can’t wait until I visit again this summer!
When I came up with the idea to make this ice cream sandwich I was going for the flavors in a tagalong cookie. Remember back when I made the vegan thin mint cookies? I said I had planned on making a pie that embodied each girl scout cookie. Welllll….that idea didn’t last too long. Vegan pies are not my friend. They never have been, but hopefully one day they will be. So far it is me;1 vegan pies;3. It’s a strained relationship but I’m working on it. Continue reading
I love my group so much! I genuinely care about each member more than I ever thought I would. Tonight we all went out to a dinner and I had an awesome time! Being out to dinner in a new setting reminded me that I am a stress eater. When I am under a lot of pressure or if my mind is thinking in overtime I eat. With the combination of grad school and healing from an abusive relationship I turned to food to feel I had control of my life and..let’s just say I had a lot of milkshakes. Continue reading
