Wow it has been a stressful week! There are a lot of changes going on right now that are just going to take some getting used to. I’m hoping that this weekend we can go on a nice hike to clear our minds. My mom even sent me new hiking shoes so I am SUPER excited to use those!
Last weekend we didn’t get the chance to go hiking because Eric was working really hard on his talk, so instead of waking up early to go hiking, I woke up early to make french toast sticks! They were so good. They taste like Burger King french toast sticks.
I used french bread for this recipe and I think it was a really good call. At our Ralph’s (Kroger) they sell ‘take and bake’ french baguette that you bake on your own at home. I bought one of these and it got us two days worth of french toast sticks. I will definitely be using this bread again.
On a side note, I feel very hesitant now to label any of my recipes as ‘vegan’ due to an unnecessary backlash my favorite blogger received recently. I have found that, even though Eric and I are not vegan, sometimes it is easiest to ask for “vegan recipes” or “vegan options” in order to accommodate his dairy and egg allergies. I now realize that a portion of the vegan community feels it is not okay to label things vegan when your entire lifestyle is not vegan. I’m very sad that people feel so free to say hurtful things to others. I feel an even stronger connection with Angela and her blog than I did before and I love that she handled the whole situation with such grace and poise in her latest blog entry here.
On a happier note…..you should REALLY try these french toast sticks….they are awesome.
