Since getting  back from Brooklyn life’s busy busy busy and these cheesecake bites were the perfect quick and easy treat to satisfy my sweet tooth! After dinner my taste buds beg for a little bite of sugar, so we are constantly looking for new treats that are easy to grab. When we don’t have anything planned we usually just default to cashew ice cream, but it is nice to switch it up. I really like these bites because the filling is super creamy and a chocolate coating makes everything better!

The nice thing about these vegan cheesecake bites is that they are no bake! You simply prepare the crust and press into a lined pan, mix up the cream cheese filling and pour into the pan and then freeze. After the filling is nice and firm, remove the bars from the pan and cut into bite sized squares. Dip them in chocolate and you’ve got yourself a tasty sweet treat.Cheesecake Bites Before Chocolate

Eric and I flew to Brooklyn last weekend to attend my brothers wedding! We had such a great time and the wedding was beautiful! We flew in on Thursday and went to see The Lobster at a theatre then went to get South African food (so yummy). The movie was the talk of the weekend and we had many good laughs from it!

The next day my mom, Greg, Eric and I took a trip to Williamsburg to go to a bakery. On the way home my mom twisted her ankle in a series of unfortunate (but hilarious) events. She ended up being off her feet most of the weekend due to a few cracked bones and torn ligaments, but somehow managed to dance the night away at the wedding! The wedding was in a gorgeous church in Brooklyn followed by the reception at an amazing French restaurant. I loved seeing how happy my brother is with his new wife and truly believe they are a great match. I’m so happy for them and glad to have gained a sister.

For the crust
  1. Line an 8x8 pan with parchment paper.
  2. Place the graham crackers in a food processor and pulse until they are the consistency of sand.
  3. Melt the butter and coconut nectar and then pour into the graham cracker crumbs.
  4. Mix the ingredients until they come together.
  5. Pour the crust into the lined pan and press down with hands.
For the filling
  1. Combine the cream cheese, sugar and vanilla in a mixing bowl and whip until combined and fluffy.
  2. Pour this mixture over the crust and freeze overnight.
For the coating
  1. Add the chocolate chips and coconut oil into a bowl and microwave until melted, stirring occasionally throughout.
  2. Remove the bars from the freezer and pop them out of the pan.
  3. Cut the bars into cubes about 1 inch by 1 inch.
  4. Dip the cubes in the chocolate and then set aside for the chocolate to harden.
  5. Store the cheesecake bites in the freezer until you are ready to eat.
