For the Bars
  1. Preheat the oven to 350ºF and line a 9×13 inch baking sheet with parchment paper.
  2. In a large mixing bowl or stand mixer cream together the vegan butter, brown sugar and granulated sugar.
  3. Add in the orange extract, vanilla extract and apple sauce and whip until combined.
  4. In a separate bowl combine the flour, baking powder, salt, and ground ginger. Stir to combine.
  5. Slowly add the dry mixture into the wet mixture while mixing until well combined. Be careful not to over mix the batter.
  6. Add the cranberries, white chocolate and candied ginger and stir with a spoon until incorporated.
  7. Spread the batter on the baking sheet in an even layer and bake for 25 minutes, or until a toothpick comes out clean.
  8. Remove the bars from the oven and use the parchment paper to transfer to a cutting board to cool.
For the Frosting
  1. In a stand mixer whip the vegan cream cheese and vegan butter until creamy.
  2. Add the orange zest and powdered sugar and whip until frosting forms.
  3. Spread the frosting evenly over the cooled bars.
  4. Top the bars with cranberries.
For the White Chocolate Drizzle
  1. In a microwave safe bowl microwave the coconut oil and white chocolate until melted (usually about 45 seconds to a minute in our microwave). Stir with a spoon and then drizzle over the bars.
  2. Cut the bars into 12 squares and then cut each square diagonally to yield cranberry bliss bars.
