Vegan Strawberry ShortcakeStrawberry shortcake is such a refreshing spring/summer dessert.

And I’m so excited it is finally summer! Summer time means strawberries and strawberries mean strawberry shortcake! When I was little my Great Grandma took me strawberry picking every year. We even went picking after she lost her leg to diabetes! We brought her a stool to sit on and her and I would crawl through the field picking and picking. I remember rummaging through the fields with the smell of fresh strawberries filling the air. After we picked to our hearts content we took our bounty back home to make strawberry jam. To this day whenever I smell strawberries I think back to those days spent in the fields and in the kitchen with my Great Grandma.

Eric and I usually make jam around Christmas time, so I wanted to make a cake during the summer instead of jam. And thus this vegan strawberry shortcake was born! The cake and frosting work perfectly together along with the fresh strawberries. Look at these deliciuos berries and creamy frosting!

Life Update:

Strawberries aside…it has been so long since I have posted a blog entry! Our lives have been incredibly busy and hectic. I can’t remember the last time I was this busy (maybe while preparing for my candidacy exam). I’m going to try to start posting more regularly and updating on what’s going on in our lives!

Right now I’m finishing up my internship at Walt Disney Imagineering. It has been such a blast working here and I hope I get the opportunity to come back one day. I never thought how many projects there were for a chemist at Disney, but now I really see the importance. I worked on so many amazing things and my team and mentor were AMAZING. I feel so lucky to have been able to participate. I guess now it’s back to finish up my Ph.D. and hopefully finish up in a year. Phew this year is going to be soooo busy! But it will be so great. For the cake
  1. Preheat the oven to 350 F, then grease and flour 3 circular 8 inch baking pans.
  2. In a mixing bowl cream the butter and sugar until fluffy.
  3. Add the almond milk, coconut yogurt, vanilla extract, almond extract, lemon juice and water and mix to combine.
  4. In a separate bowl combine the flour, cornstarch, baking soda, baking powder and salt.
  5. While mixing slowly pour the dry ingredients into the wet ingredients and mix until well incorporated.
  6. Evenly divide the batter into the 3 baking pans. Bake at 350 until a toothpick comes out clean (about 22 minutes). Remove the cakes and allow to cool to room temperature.
For the frosting
  1. Rinse the fresh strawberries and slice into bite sized pieces. Wrap them in a paper towel to remove as much moisture as possible and set aside.
  2. Remove the coconut cream from the container and place it in a mixing bowl (be careful not to get any of the liquid, only the cream!)
  3. Add the vegan cream cheese, vegan butter and vanilla extract. Whip until light and fluffy.
  4. Pour the strawberries into the frosting and use a spoon to fold into the frosting.
  5. Place one layer of cake onto a platter and top with 1/4 of the frosting mixture. Add another layer of cake and then another 1/4 of the frosting. Top with the final layer of cake and then spread the rest of the frosting to the outside of the cake. Garnish with fresh strawberries.
  6. Chill before serving.
