Vegan Tofu Scramble

tofu-scrambleI had this tofu scramble planned for breakfast this weekend, but we ended up not needing breakfast. Eric had the brilliant idea to make the scramble into breakfast burritos and save them for weekday breakfasts! This was an amazing idea. We are usually so slow to get out of bed in the morning. We try to get every last second of sleep we can and generally end up only taking 15 minutes from getting out of bed to walking out the door. Already prepared breakfasts are really our go to. 80% of the time we eat overnight oats because they are just so darn easy. I see a change in our horizon with these breakfast burritos!

For this tofu scramble I went with a sort of Tex Mex inspiration, which turned out well because we were able to eat it with salsa and avocado, yum. I can totally see all the different directions we could go with this…curry scramble, traditional scramble, ‘cheesy’ scramble. Meat eaters can even add bacon or sausage and enjoy.

Our dishwasher has been broken lately so we have been washing all of our dishes old school style. It really gives me a new appreciation for dishwashers and how much time they save. Three technicians have already come out to look at it and we still don’t know what’s wrong with it. Eric thinks it may be the drain pump but who knows. I’m hoping this gets fixed soon so we can get back into our regular schedule.

Last week I had a meeting with my committee to discuss my timeline to graduation. I’m so happy to say that my timeline will stay exactly as I proposed. I will even have my introduction chapter finished by the end of this week!! Woot woot! It has been really nice this past month actually being able to see the light at the end of the tunnel. Five years is a long time to do somethings as mentally (and sometimes physically? hello no sleep) demanding as grad school. In any case I am one step closer to getting out into the real world. I’ll take it 🙂

For the tofu scramble

Instructions
  1. Drain the tofu and wrap in paper towels and then tea towels. Use a tofu press or heavy book to press the tofu. (Press for about 30 minutes)
  2. Mix the nutritional yeast, paprika, salt, chili powder, ground annatto and garlic powder. Set aside.
  3. Heat the oil in a large skillet.
  4. Saute the garlic, red pepper and onion until the onion is translucent.
  5. Crumble the tofu by hand into the skillet and then pour the spice mixture on top, followed by the cleaned spinach.
  6. Mix the tofu scramble using a wooden spoon and allow to cook for about 10 minutes until the tofu is warmed through and the spinach has wilted.
  7. Serve with tortillas, avocado and salsa.
