Vegan Healthy Caramel Apple Bites

Caramel Apple BitesThese caramel apple bites are an awesome healthy dessert! We have gotten used to having something sweet in the evenings and we really need to reel this in a little bit. Instead of having super sugary desserts I’ve been trying to think of healthier ways to satisfy that sweet tooth. I got the idea to make caramel apple slices from domestically blissful (hers look so tasty!). I wanted to make these vegan so that Eric and I could enjoy these together, so I decided to make a raw date caramel instead of using traditional caramel. These were super easy and very yummy. We originally planned on only eating two each….but….we ate them all.

To make the raw date caramel just add 15 pitted medjool dates to a food processor along with 2 tbsp of almond milk and 2 tbsp of coconut cream (alternatively add almond milk in substitute for the coconut cream). Process the dates until a creamy paste forms. Continue reading

Ingredients

Instructions
  1. Preheat the oven to 350F and grease/flour the insides of two ramekins.
  2. In a bowl mix the flour, baking powder, baking soda, salt and cocoa powders.
  3. In a separate bowl combine sugar, almond milk, oil, vanilla and applesauce.
  4. Pour the dry mixture into the wet mixture and whisk to remove lumps. Add hot water and whisk to incorporate.
  5. Split the batter evenly between the ramekins and bake at 350F for 15 minutes.

Corgi Day at the Beach! – And Lemon “Meringue” Cups

lemon meringue cupsThis weekend instead of hiking we went on a beach picnic with another (awesome and super fun) couple. It was “Corgi Day” at the beach and we all love animals so we decided to go see all the corgis. There were soooooo mannnyyyy corgis (over 500). We saw corgi puppies, corgis with cowboy hats, corgis in tutus, corgis in bathing suits, corgis with bows, etc.

I’m hoping that this weekend we can go on a nice hike to clear our minds. My mom even sent me new hiking shoes so I am SUPER excited to use those!

Last weekend we didn’t get the chance to go hiking because Eric was working really hard on his talk, so instead of waking up early to go hiking, I woke up early to make french toast sticks! They were so good. They taste like Burger King french toast sticks. Continue reading

Peanut Butter Ice Cream Sandwiches

ice cream sandwich and almond milkI remember when I lived at home there was a period of time when my little brother LOVED to eat ice cream sandwiches. There was always a stock of them in our freezer. Now I have all of this peanut butter ice cream laying around so I figured why not make ice cream sandwiches! Eating these has made me a little homesick. Can’t wait until I visit again this summer!

When I came up with the idea to make this ice cream sandwich I was going for the flavors in a tagalong cookie. Remember back when I made the vegan thin mint cookies? I said I had planned on making a pie that embodied each girl scout cookie. Welllll….that idea didn’t last too long. Vegan pies are not my friend. They never have been, but hopefully one day they will be. So far it is me;1 vegan pies;3. It’s a strained relationship but I’m working on it. Continue reading
